Wheres best for my boyfriend and I go to go in the Caribbean?

We're looking to go to the caribbean this summer and are looking for an appropriate resort. We're looking for somewhere quiet (No kids clubs etc) but with plenty of places to go in the evening to eat and drink. Also really want to experience true caribbean life.. i.e white sands quiet beaches etc. Could anyone recommend anywhere please?
